Beet, Blood Orange, Red Onion & Pomegranate Salad

Combine fruits and vegetables of the season for a delicious, colorful and nutritionally rich appetizer or side dish for your holiday table. The pomegranate is one of the foods highest in antioxidants”¦

This is a great way to try Pomegranates and Blood Oranges which are in the markets now through the end of December”¦ Pomegranates are one of the ancient foods mentioned in the Old Testament. They are part of the cuisine of places like France, Italy, Iran, Morocco and California where they are now grown. Try this array of red-purple fruits & vegetables for your holiday table”¦

Beet, Blood Orange, Red Onion & Pomegranate Salad

4 red or variegated red-orange beets
2 Tbsp light olive oil
1 tsp salt (optional)
1/2 tsp ground black pepper

1/4 c. blood orange juice (juice from approx 1/2 blood orange)
1 Tbsp pomegranate molasses (or honey)
1 Tbsp champagne or white wine vinegar

1 medium red onion, slice very thin
2-3 blood oranges, peeled, cut into 1/4 inch thick slices
Seeds from 1 large pomegranate*

Preheat oven to 400F. Wrap beets in foil and roast until beets are tender, approx 1 hr. Open foil, cool beets. When cool, peel beets and cut each into at least 8 wedges or slices.

In a large bowl whisk blood orange juice, molasses or honey, vinegar and 2 Tbsp oil. Season with salt & pepper (optional). Add beet wedges, onion slices, orange slices and pomegranate seeds. Toss and check for seasoning. Serve on top of leaves of Boston lettuce.

*How to buy and prepare a pomegranate:
“¢ Choose large, brightly colored & shiny fruit that are firm to the touch and heavy for their size. Avoid those with cracked skin.
“¢ Pomegranates store well at room temperature for 2-3 weeks. They become more juicy and flavorful with time. You can freeze the seeds for up to 3 months to extend the season beyond December.
“¢ To prepare – cut off the crown, cut into quarters. Turn the skin inside our and pop out the seeds
