Posh Squash Fries


  • 1 large butternut squash (top portion, not seeded end)
  • 2-tsp olive oil or canola oil
  • 1/2 tsp garlic powder
  • 1/8 tsp cayenne or red pepper (optional)
  1. Preheat your oven to 450 F.
  2. Cut squash into 1/2-3/4 X2 2-3 inch sticks as you would french fries and place in a bowl.  Save the rest of the squash for another meal. Sprinkle on the garlic powder and pepper if using. Add the oil and toss to coat evenly.
  3. Arrange the fries in a single layer on a rimmed baking sheet.
  4. Bake approx 15-20 minutes or until the squash is golden brown. Stir after the first 10 minutes of cooking to brown evenly.
